Making home cooked meals doesn’t have to be complicated, overwhelming or take a long time. I promise! Today I want to share an easy quick dish that can be eaten for any meal – yes even breakfast! It is also easy to double and full of veggies, which you know I love.
Kale Fried Rice
- 1 1/2 cup cooked brown rice
- 2 1/2 cups cauliflower rice
- 1 onion chopped
- 4 cloves garlice cloves chopped
- 1 bunch kale chopped
- 4 eggs
- 2 1/2 tablespoons tamari or soy sauce
- 1 tablespoon butter or coconut oil
- chopped nuts optional
Heat pan over medium heat and melt butter.
Add chopped onion to pan and cook 2-3 minutes.
Add cauliflower rice and cook another 3-4 minutes.
Add kale and garlic, cooking another 3-4 minutes.
Make a well in the middle of the pan and add beaten eggs and stir to combine and until eggs cooked.
Finally, add in cooked rice and tamari.
Top with nuts, if using.
To cook brown rice, use a 2:1 liquid to rice ratio. Add water or broth to a pot and bring to a boil. Once boiling, add rice, reduce to a simmer and cook covered for 50 minutes. Let rest an additional 10 minutes. I typically make in bulk and freeze in 1-2 cup portions for making meals like this even quicker!
Also, feel free to skip rice completely and do all cauliflower rice.
