Ramen Bowl

by | Nov 17, 2020 | Recipes

Ramen bowls are a traditional Japanese meal that consists of broth, veggies, usually a protein and lots of yummy fresh toppings.

Today I am sharing my take with nourishing gut supportive ingredients like traditional bone broth, lots of fresh veggies and topped with a ferment.

As with most of my recipes, I offer a basic template, but encourage you to step in and sub your favorites.

Another benefit to this flavorful bowl – it is pretty simple to make and takes little time, which is great for your busy household.

I hope you enjoy!

HERE IS SOME INSPIRATION FOR TOPPINGS!

Ramen Bowl

Servings 4

Ingredients

  • 2 baby bok choy cabbage chopped
  • 8 ounces mushrooms chopped
  • 3 carrots chopped or shredded
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger chopped
  • 2 tablespoon coconut oil or butter
  • 32 ounces bone broth
  • 1 tablespoon tamari or coconut aminos
  • 3 tablespoon rice wine vinegar
  • 2 blocks ramen millet or brown rice noodles

Optional add in

  • 1 pound ground pork

Toppings

  • bean sprouts
  • green onion
  • cilantro
  • boiled egg
  • avocado slices
  • lime wedge
  • corn kernels
  • pickled ginger
  • gochujang or sriracha sauce

Ferment Toppings

  • raw fermented sauerkraut
  • raw fermented kimchi
  • fermented pickled radishes
  • fermented pickled veggies

Instructions

  • Melt oil in a pan over medium heat.
  • Add carrots and mushrooms and cook 5-7 minutes. If using pork, start browning that before the veggies and add veggies after a couple of minutes. You likely won't need to add additional oil or butter due to fat from pork.
  • Add in chopped garlic and ginger and cook for one more minute.
  • Pour in tamari and vinegar, then bone broth and bring to a boil.
  • Add in noodles and cabbage and cook according to package instructions, stirring regularly.
  • Spoon into bowls and top with your choice of toppings.
