Buffalo Belly Bowl

Building a nourishing meal doesn’t have to be complicated or take forever. 

 

One of favorite ways to eat is what I coined the Kitchen Sink Belly Bowl.  The basic concept is building a bowl (or plate) with veggies (lots of them), clean quality sources of protein + fat, and a gut supportive ferment. You may also want to consider an additional optional carbohydrate in addition to the veggies and a fun sauce. 

 

Today, I am sharing a bowl inspired by a local restaurant in our area, t.Loft, with some upgraded additions to fit my framework for supporting your gut and eating nutrient dense foods. 

 

Not sure why, but give me buffalo sauce on everything lately!

Buffalo Belly Bowl

Servings 6

Ingredients
  

  • 2 cooked chicken breasts about 3 cups
  • 1 cup quinoa uncooked
  • 1 bunch kale
  • 8 oz mushrooms
  • 3 stalks celery
  • 1 carrot
  • 2 teaspoons oil
  • 1/2 teaspoon salt

Toppings

  • sauerkraut
  • avocado
  • buffalo sauce
  • blue cheese optional

Instructions
 

  • Rinse quinoa and add to pan with 2 cups water or broth. Bring to a boil, cover, simmer for 15 minutes. 
  • While quinoa is cooking, chop kale, mushrooms, celery and shred the carrot.  Sauté veggies with 1/2 teaspoon of salt and 2-3 teaspoons of oil in a pan over medium heat until tender, about 10 minutes. 
  • Mix cooked quinoa and chicken into pan. 
  • When ready to serve, scoop into bowls and add toppings of choice. 

Notes

If you are like me and aren't a service line chef for your family, my kids get what we eat. I skip the buffalo sauce for them and add a different dressing or just add more mashed avocado.. Another alternative that I have done is pull out some of the mixture into a bowl,  add an egg and form into patties. Then I just brown up in a skillet on the stove top.
