Running out of dinner ideas because we are on day 3764 of stay home order?!?
We love Mexican at our house and have some variation of it at least once a week.
Mexican to us is not loaded with heavy ingredients, instead it is full of fresh veggies and always sliced AVOCADO!
We recently did a DIY Chipotle Bowl Bar and it was a hit. Everyone could make it the way they wanted and the kids loved assembling their own.
I always have some cooked brown rice in the freezer I can quickly thaw but if you don’t it only takes 22 minutes in an Instant Pot which isn’t bad either!
Ideas for the bar:
